chicken stir fry!

So before I start I know I skipped a night. I cheated a little bit and went out with a friend.

But back to tonight. Since I still had chicken left over from the other night I thought about doing some kind of fajita. I decided to simplify that for tonight and just make a stir fry. Seemed a lot easier. So my plan was chicken, peppers and potatoes all stir fried together.

So it all started around 4pm when I realized that I didn't take the chicken out of the freezer this morning. So I did at 4pm knowing that it would still be a solid rock at 7:30pm when I wanted to make dinner. I didn't have much of a choice. The chicken was all I actually had in the apartment. So I had to make another run to the grocery store. Thank god that place is so close.

My question is...why are there so many types of potatoes? Aren't they all potatoes? I don't get it. Of course I called mom...she said the red ones were the right kind for stir fry. I have to agree now. Then I realized I need an onion. Once again why are there so many! It is an onion! Mom said Vidalia or something like that? The onion was the size of a small child. Ok maybe not the whole child but maybe the head. What was I going to do with that tomorrow? So I went with the little one...white onion or something like that. I also got two peppers (red and orange if it makes a difference).

So I come home and realize I now have to figure out what to do with the frozen chicken..."Mom what do I do with a frozen chicken." She said since I could cut into it that I should cut it into pieces and stir fry it with the onions for a few then put the veggies and potatoes in. She is so smart! So that is what I did. I found some oil with pepperccini and used that. Gave it a little spice then I added some spicy pepper flakes as well. I like it spicy!

I have to say it was quite tasty! The chicken wasn't try. For the most part the potatoes were cooked and the veggies were fabulous! I know you are probably shocked I added the veggies. Don't get too shocked it was only peppers!  I eat those! Could have used more spice but that is easy to fix!

So afterwards...

So all in all I think dinner was pretty good.
The chicken was a little bland BUT it was cooked and that is important. One thing at a time right now.
The rice was good too...however, I made the whole box. It is just me...anyone want some rice. I have a lot left over!

Next time I will post after the meal so there isn't two posts...that is kinda annoying. I also need to figure out how to add pictures to my posts. Pictures are definitely worth a thousand words!

The first night of real cooking

So I have decided to start a blog about my cooking. Most people know that I am NOT a cook. By no means am I good at it. It isn't that I don't like doing it. I just don't know what I am doing in the kitchen or the grocery store for that matter!  But I must learn this year.  I am going to learn to cook and as I do you will be able to read about my mishaps, questions and hopefully masterpieces.

This is the first night of real cooking in the apartment. I have been here for over a week now but I have either made pasta (which doesn't count as a real meal) or gone out with friends. I decided that I didn't want to eat pasta for the second night in a row. I wanted chicken and rice. Sounds easy for most people...not for me.

The journey begins with the trip to the grocery store. How am I supposed to know which chicken to buy. There are so many options! It is just chicken. This is where the first phone call to mom happens...."Mom, what chicken do I buy?" I went with Purdue chicken breasts. Looks like a good pick. I get some Italian Dressing and a box of Rice Pilaf.

I get everything all set up. I read the box for the rice, got the pot set up water is boiling...there are no directions on the chicken. Second phone call to mom..."How long does the chicken take? Should I start it at the same time as the rice." The answer was yes. I get everything going. I marinated the chicken in some dressing put it on the George Foreman. The rice is cooking. Everything is going well....

The George starts to smoke...third call to mom..."Mom is the George Foreman supposed to smoke so much?" Well I find out that the chicken won't take as long this way and now it will be done way before the rice. Which is exactly what happened. The chicken has been done for 5 min and the rice is still cooking.

So I am waiting for the rice to finish....which reminds me I should probably check it before I burn it or something. Here is to the first entry in the blog and my first REAL meal in the apartment.I will let you know how it tastes after!
